4 large egg yolks
½ cup caster sugar
100ml marsala
600ml cream and ½ cup vanilla
sugar (whipped to form soft peaks)
1 single plain sponge
600g pitted cherries
1 short black coffee
Cocoa, for dusting
Place a pot of water on the stove and bring to the boil.
Place the egg yolks and caster sugar into a stainless steel bowl and whisk together over the boiling water.
Add the marsala and continue whisking until smooth. Remove from heat and using an electric mixer whisk until cool.
Fold into whipped cream.
Slice the cake into strips 1½cm thick.
Using a serving bowl 21cm x 11cm deep, start layering ingredients into the bowl – place some cake, a sprinkle of coffee, cherries then the cream mixture.
Repeat until finished.
You need to end with a layer of cream mixture.
Sprinkle with cocoa and refrigerate overnight. |
